What's your favorite summer cocktail? I'm personally a big margarita fan, but this strawberry lemonade mojito wins me over every time. An ice cold, refreshing cocktail with muddled fruit and fresh, bright mint and citrus flavors is so refreshing on warm days.
This skinny strawberry lemonade mojito is made with only 6 ingredients that are super easy to find in almost any grocery store. It is made with white rum and sweetened with stevia instead of cane sugar. With no refined sugars, this is a summer drink you can responsibly enjoy with (almost) no guilt.

- Mint leaves- These are the staple ingredient of any mojito! It gives the drink a fresh, herbaceous flavor. Make sure to fully wash and dry your mint leaves before using them in this recipe.
- White rum- This rum has a light and sweet flavor and is used in traditional mojito recipes. If you don't have white rum on hand, gold rum will work but will change the color of the drinks.
- Fresh strawberries- Ripe, fresh strawberry slices are perfect for muddling. Wash your strawberries thoroughly before making these cocktails.
- Organic stevia leaf extract- Just a touch of stevia adds sweetness to these cocktails.
- Lemons or limes- Limes are usually found in a classic mojito recipe, but this recipe is made using lemons. If you don't have lemons on hand, you can totally make a strawberry limeade mojito. Use fresh, whole lemons and limes rather than bottled lemon or lime juice.

Making cocktails sometimes requires special equipment. This recipe doesn't require that much, but here are some things you might need.

- High ball glass
- Straws (optional)
Step by Step Instructions
Here are the steps to make the recipe.
STEP 1: First, wash and dry your produce and then slice your strawberries and lemon. Then, smack the mint in your palms to release its oils. Add about 6 mint leaves, 6 strawberry slices, and half of a sliced lemon to a tall glass and muddle. Do this by firmly pressing down and mashing the fruit and citrus in the glass with a muddler. If you don't have a muddler, you can use the back of a spoon.
STEP 2: Add the stevia leaf extract and white rum. Stir until everything is well incorporated.
STEP 3: Add ice to the glass, filling it up nearly all the way. Crushed ice is traditionally found in mojitos, but any ice you have will do.
STEP 4: Pour in the club soda or sparkling water. My favorite is Topo Chico, but La Croix, San Pellegrino, or any other brand works in this recipe.
STEP 5: Garnish your skinny strawberry lemonade mojito with a mint sprig, strawberry slice, and serve!
"Spanking" the Mint
While making mojitos, we muddle the mint to help to release its oils. The oils are what help the drink smell and taste great. If you are just using the mint as a garnish, be sure to smack (or "spank") it first so that it's aroma will be released! It will make the drink taste so much better. This applies to other herbs too, like basil, rosemary, lavender, and sage.

- Only muddle the mint 4 to 6 turns to keep the mint from becoming bitter.
- This recipe as is makes one cocktail, but you can double, triple, or quadruple it depending on how many drinks you need to make. You can even make a big pitcher to serve at a party.
- You may need to adjust the amount of stevia or sweetener used depending on how tart the lemons are and if you are using unsweetened soda water.
- Use the freshest lemons or limes you can get your hands on!
Gold rum, gin, tequila, or vodka can be used instead of white rum.
For a virgin mojito, use extra sparkling water instead of alcohol.
Any fruit can be used instead of strawberries, like blueberries, blackberries, and watermelon.
Flavored sparkling water can be used instead of soda water. My favorite is Spindrift Lemon Sparkling Water.
Monk fruit, cane sugar, or simple syrup can be substituted for the stevia leaf extract.
Feel free to throw in any additional fruit that you have laying around! Blueberries and pomegranate seeds are nice for some extra flavor.
You can add some lime juice to these lemonade mojitos for an extra hint of citrus.

Nope! I know that a lot of people really don't like the aftertaste of stevia. You can use monk fruit, honey, simple syrup, or store-bought lemonade instead. Just be aware that using one of these sweeteners will change the nutrition facts.
It's pretty easy to make this into a frozen mojito. Add extra ice and all the ingredients except the mint to a blender and blend (use the juice of half a lemon instead of lemon slices). Mix in the mint leaves after and garnish with a fresh strawberry slice.
Yes you can. Just muddle the fruit the same way as the strawberries! Two of my favorites are blackberries and raspberries.
If you are making a batch of skinny strawberry lemonade mojitos, you can store them in a covered pitcher in the refrigerator for up to one day before serving. Any longer than this and the mint will wilt and look unappetizing. Only garnish the cocktails right before you serve them so that the mint looks extra fresh.

- 2 strawberries sliced
