Thick, soft sugar cookies loaded with festive birthday sprinkles!
These birthday cake sugar cookies are the tastiest gluten free cookies you'll ever make. They're loaded with sprinkles and taste like Funfetti batter.
Flour, baking powder, salt, butter, sugar, vanilla extract, almond extract, egg, egg yolk, rainbow sprinkles
Sift the gluten free flour into a large mixing bowl. Then, mix in the baking powder and salt. In a separate bowl, cream the butter and sugar together.
Mix the egg, egg yolk, vanilla extract, and almond extract into the beaten butter and sugar. Then, beat on high speed for about 1 minute. Scrape the sides of the bowl.
Mix the flour and other dry ingredients into the wet ingredients on low speed. It will be a thick but slightly sticky dough. Then fold in the sprinkles.
Use a cookie dough scoop to scoop the dough onto a baking sheet lined with parchment. Place the dough balls about ½ inch apart on the baking sheet. Lightly press down each ball.
Bake the cookies for about 10-12 minutes at 350F. Top the warm cookies with extra sprinkles. Let them sit on the hot pan for a few minutes before transferring them to a cooling rack.
