Chewy Molasses Cookies

step 1.

In a large bowl, whisk the oil and coconut sugar together. Then add the molasses, vanilla extract, and egg. Whisk vigorously until well combined.

In a separate bowl, whisk flour, baking soda, salt, ginger, cinnamon, cloves, and nutmeg together. Add half of the dry ingredients to the wet, gently fold, and repeat.

step 3.

Chill the dough for 30 minutes and preheat the oven. Scoop the dough and roll each dough ball in granulated sugar.

step 4.

Bake the cookies at 350F for 11-13 minutes. Bang the pan on the counter immediately after it comes out of the oven to encourage spreading and cracking.

Let the cookies cool for 5 minutes on the baking sheet before transferring to a wire cooling rack. Let them cool completely and enjoy!
