You need these ingredients to make the pancakes: flour, baking soda, baking powder, salt, lemon juice, lemon zest, egg, sugar, avocado oil, and vanilla
Whisk the all purpose flour, baking soda, baking powder, and salt together in a large mixing bowl.
In a separate mixing bowl, whisk the sugar, milk, vanilla, lemon juice, avocado oil, and egg together.
Mix the wet ingredients into the dry. Be careful to not overmix the batter. Then, fold in the lemon zest gently.
Pour 1/4 cup batter onto a pan on medium high. Flip when bubbles form on the surface of the pancake.
